An in-house lab (run by Marta our Biotechnologist) ensures we consistently test key variables including the viability and health of our two in-house yeasts which are hugely important. These are flown into us from San Diego to ensure optimum freshness.
Quality and consistency are very important to us and we have an intense Quality Control program. We record, document and test at every step; we ensure every fitting, seal and valve is sterile and constantly check and assess our processes. Oxygen is an enemy of great fresh beer so we work with specialists including Anton Paar to test and ensure we have low dissolved oxygen. We can our beers to lock in the freshness and keep those oxygen and UV light out (that damages the hops). We sensory test every batch before it’s packaged and again before it’s released to ensure you are getting the best possible garden fresh beer.
